Monday Munchies: Chicken two ways and a fantastic finish!

What a week! This blogger found herself coming home primarily to kick of her shoes and pass out, because each day seemed to be jam-packed! However, I was able to chow down on some phenomenal food this week that I’d love to share with you!

1. On Monday I got to hang out with my dear friend Madelyn. She cooked this fantastic meal of Baked Mustard-Lime Chicken and asparagus, and it’s already made my future cooking endeavors list (aka I told Brandon I’m making it for him this week!). Between this and my freshly made Lime-Basil Limeade, we had an awesome time! It was so good to spend quality time together, and the delicious meal only made our time sweeter. I’m so thankful for good friends to share food, encouragement, and good laughs with!

Friday marked my last day of work at the preschool I have taught at this past year. It was a bittersweet day – I’m excited to start pre-planning for my new job, but I definitely choked up when saying goodbye to my kiddos and all of my amazing co-workers. On Saturday, I was able to celebrate with Brandon the end of the summer at camp! [Recap: My husband subbed in for another counselor for three weeks at a local camp we used to work at.] He had an amazing time and did an incredible job as a counselor (duh!). We celebrated Saturday at the camp’s banquet, and then headed off to spend time with friends. 

After Brandon and I spent a day or so catching up on some much-needed rest, I headed back to the kitchen tonight with a spring in my step. Cooking is always more gratifying when I’m cooking for others, especially my husband. And tonight’s meal was a mouth-watering meal that is oh-so-worth-sharing!

2. These scrumptious Crunchy Coconut Chicken Fingers with Peach Honey Mustard. WOW! Jessica from How Sweet it Is talked about how her coconut-hating husband loved these chicken fingers. This got me excited, because I thoroughly enjoy all things coconut and my lovely counterpart does not. But I’ve got to give it to Jessica, she was right! He loved them, despite knowing they were bathed in coconut! Success!

3. This little concoction was just for me because my sweet tooth was calling. For a while now, I’ve been craving Bananas Foster, a New Orleans favorite. My dad used to whip this stuff up on the stove and we’d have it over our vanilla ice cream – DIVINE! And I have to say, I was pretty impressed with these “Fried” Honey Bananas from Rachel Schultz. It’s definitely not as rich as Bananas Foster, but it is a lighter way to indulge. I added some coconut shavings to mine, as well as a pinch of brown sugar, and served it over vanilla frozen yogurt. Yum!
